Ingredients & Method

Cake
¾ Cup Olive Oil
150g Sugar
3 Eggs
190g Plain Flour
1 1/3 Tsp Baking Powder
1 1/3 Tsp Bi=Carb Soda
1 1/3 Tsp Cinnamon
1 Tsp Vanilla Extract
½ Tsp Salt
2 Cups grated Carrot
¾ Cup Walnuts

 

Icing

60g Butter or Margarine
1 Tsp Vanilla
125g Cream Cheese
250g Icing Sugar

 

Method:

  1.  Beat eggs, add oil and sugar mix.
  2.   Add dry ingredients and combine.
  3. Stir through carrots and walnuts.
  4.  Bake in a moderate oven for 1 hour.
    For Cupcakes, bake at 160’ for 20mins.
  5. For Cupcakes, bake at 160’ for 20mins.
  6. Beat all icing ingredients together and ice cake once cool.
